Celeriac Soup

Ingredients

Nob of butter

1 celeriac

1 onion

1 leek

1 potato

1 clove of garlic

1 litre of vegetable stock

Method

Peel & dice the celeriac, onion, leek, potato & garlic

Melt the butter in a large pan over a medium heat

Add all of the chopped ingredients to the pan

Gently sweat the vegetables until softened

Add the stock, bring to a boil, turn the heat down & simmer for about 20 minutes

Blend until smooth, return to the pan & reheat on a medium flame

Season & enjoy!
