Pumpkin Soup

 

Ingredients

a nob of butter

medium onion finely chopped

200g potatoes, peeled & chopped

250g carrots, peeled & diced

900g pumpkin, peeled & diced

2 pints of vegetable stock

50ml milk

salt & pepper to taste

 

Method

Melt the butter & gently cook the onions for 5 minutes

Add the potatoes, carrots, pumpkin & vegetable stock

Cover, bring to the boil & simmer for about 20 minutes

Cool a little, then using a hand blender, blitz until you get a smooth texture

Stir in the milk, salt & pepper
